- Oats: Oats are a fantastic source of dietary fiber, which helps keep you full for longer and supports a healthy digestive tract – aka keep things regular – and yes we mean your poops! Ever heard oats are heart-healthy? That’s true – research consistently links oat consumption to improved cholesterol levels thanks to fiber content. As a whole-grain (one you should be consuming more of in the diet) – they provide slow-to-digest complex carbs which supports steadier blood sugar levels.
- Honey: Honey is still an added sweetener, but does contain trace amounts of minerals and antioxidants making it better for you than plain granulated sugar. Don’t have honey? You can use maple syrup too.
- Cashew butter: Cashew butter is rich in monounsaturated fats and contains a few grams of protein to keep these cookie dough bites blood-sugar friendly and satisfying. Cashew butter has less of a ‘taste’ than peanut butter or almond butter so works better in this recipe over the other two. But if all you have is a PB or AB those could work out great too. I used Whole Foods 365 cashew butter, but any unsweetened variety works.
- Vanilla extract: Vanilla extract gives your cookie dough bites its classic flavor. Contradictory to popular brief – it’s also safe to consume raw. Vanilla extract adds a delicious flavor and aroma to your cookie dough so don’t skip it.
- Dark chocolate: Dark chocolate contains several health benefits – but be sure to choose a dark chocolate that contains at least 70% or more cocoa to reap it’s benefits. Dark chocolate is rich in antioxidant flavonoids, contains a decent amount of dietary fiber, and is lower in sugar than milk or semi-sweet chocolate. I love using Guittard Extra Dark Chocolate Chips.
