Who doesn’t love pancakes? And who doesn’t love tacos? These two beloved foods are combined to make a fun and nutritious breakfast dish! Both kids and adults will love these!

These fruit pancakes tacos are made using a bag of whole wheat pancake mix, such as Kodiak Cakes Power Cakes. Then filled with greek yogurt, which adds protein, which will keep you full for longer and keeps your blood sugar more stable. Finally the pancakes are topped with fruit. You can top with any fruit you have laying around on your kitchen counter or in your fridge. Berries, banana slices, kiwi slices all would taste great in these!

  • Whole grain or whole wheat pancake mix: Choose a pancake mix that is made from whole grains, and look for whole wheat flour as the first ingredient. Whole wheat pancake mix has more nutrients than regular pancake mix. The healthy fat, healthy fiber, and protein found in pancake mix will keep you full for longer, and prevent any type of blood sugar spikes compared to traditional pancakes
  • Greek yogurt: I’d choose a plain, non-fat variety of greek yogurt, it will pack the least amount of sugar, and provide you with plenty of protein. Protein traditionally is not found in a pancake meal, however this recipe includes it to provide you with long-lasting energy and feelings of satiety. You could always use cottage cheese or farmer’s cheese instead of yogurt here.
  • Fruit: any variety of fruit works here. Did you know only 10% of Americans are eating enough fruits and veggies each day? One way to eat more is to incorporate them into each meal or snack you are eating throughout the day. Here they add a pop of sweetness to the pancakes, you won’t need syrup!
