Nutrition Breakdown: Fruit Pancake Tacos
- Whole grain or whole wheat pancake mix: Choose a pancake mix that is made from whole grains, and look for whole wheat flour as the first ingredient. Whole wheat pancake mix has more nutrients than regular pancake mix. The healthy fat, healthy fiber, and protein found in pancake mix will keep you full for longer, and prevent any type of blood sugar spikes compared to traditional pancakes
- Greek yogurt: I’d choose a plain, non-fat variety of greek yogurt, it will pack the least amount of sugar, and provide you with plenty of protein. Protein traditionally is not found in a pancake meal, however this recipe includes it to provide you with long-lasting energy and feelings of satiety. You could always use cottage cheese or farmer’s cheese instead of yogurt here.
- Fruit: any variety of fruit works here. Did you know only 10% of Americans are eating enough fruits and veggies each day? One way to eat more is to incorporate them into each meal or snack you are eating throughout the day. Here they add a pop of sweetness to the pancakes, you won’t need syrup! Plus fruit is loaded with vitamins, minerals, antioxidants and plenty of fiber, to keep you staying healthy!
