Greek food lovers – dig into your new favorite homemade feta fry recipe! These aren’t just regular fries, they are air-fried fries, so way lower in fat than other fries, and they are topped with some of the best greek-style ingredients may already have in your fridge. Taking them from plain old fries to zesty, cheesy, olive-y fries. Pair with a bowl of homemade falafel, and big greek style salad- you’ve got yourself a well-balanced meal!

What You’ll Need To Make It

  • Russet potatoes
  • Feta cheese
  • Hummus
  • Lemon
  • Parsley
  • Avocado oil or olive oil
  • Oregano
  • Cumin
  • Paprika
  • Salt & pepper

Equipment

  • Air-fryer (I have the Ninja pressure cooker + air-frier combo- love it!) or a baking pan if you don’t have an air-frier works too!
  • Bowl
  • Ice
  • Sharp knife
  • Cutting Board

Nutritional Breakdown

  • Potatoes: potatoes get a bad wrap, but potatoes are a good source of potassium, a critical electrolyte our body needs daily, and dietary fiber (if you keep the skin on), helps keep your digestive tract moving and keeps you full for longer. In this recipe you will see I recommend keeping on the skins as that’s where the nutrition is in a potato and air-frying them allows you to get a crispy fry without needing a lot of oil.
  • Avocado oil: after you give your potatoes a ice bath and dry them, I rub with them with some avocado oil. I prefer avocado oil over olive oil when cooking, as avocado oil contains heart healthy monounsaturated fat and has a higher smoke point(can withstand higher cooking temps!)

  • Feta Cheese: get your hands on some good quality feta cheese. I always love Whole Foods brand feta, but even some authentic one I’m sure would taste even better!
  • Hummus: everyone’s favorite fridge staple nowadays is packed with a bit of healthy fat, fiber and protein, a little bit of everything makes it the perfect spread.
  • Parsley: adds some vitamin C and vitamin K, if you don’t have you can always sub it for a different fresh herb.
  • Lemon Juice: adds some vitamin C and zesty flavor to your fries.

How to Make Feta Fries

  1. Wash and slice your russet potatoes or sweet potatoes into desired thickness.
  2. Add sliced up fries to a bowl of ice water
  3. Let sit for at least 30 minutes in your fridge or on the counter top, allowing them to sit in ice water, removes some of the starch from the potato so they don’t stick together and makes them more crispy
  4. Once they’ve soaked sufficiently, remove the water, and dry them with a kitchen towel.
  5. Add your spices and avocado oil to the cut up fries
  6. Let sit for at least a few minutes, you can heat up your air-fryer in the meantime
  7. Add seasoned fries to your air-frier for 390′ degrees for about 15 minutes, flip half way through
  8. While they are cooking, pull out the hummus, olives, parsley
  9. Mix together 1/2 cup of hummus with juice of 1 lemon until its a more liquid consistency
  10. Top your fries with hummus mixture, crumbled feta cheese, olives, parsley- then eat!

How To Store Feta Fries

Best to eat right away, but can last for 1-2 days in the fridge covered. You can re-heat the fries in the oven at a low temp, like 250 degrees for 10 minutes.
